The Kitchin - Edinburgh, Scotland
Owner and chef Tom Kitchin transformed the once whiskey warehouse into the must stop one michelin star restaurant when in Edinburgh. The Scottish highlands environment is tastefully incorporated in the dining room with elegantly positioned wood logs and beautifully recreated dry stone wall that is ubiquitous to the country. Every guest is presented with a map of where all their seasonal produce, fresh seafood and meats originate from. It is not everyday you come across an establishment that pairs high level of transparency with a “nature to plate” philosophy. The French technique and Scottish ingredients shine in dishes like the duck confit and artichoke tortellini. Don’t skip on the whiskey as they treat it with the same respect as wine, providing a tasting that perfectly complements each course.
